For the Crust:
- 4 bone-in, skin-on chicken thighs
- 1 pound baby potatoes, halved
- 8 ounces green beans, trimmed
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a large bowl, toss potatoes and green beans with olive oil, minced garlic, thyme, paprika, salt, and pepper.
- Arrange potatoes and beans on a baking sheet in a single layer. Place chicken thighs on top, skin-side up, and season with additional salt and pepper. Top with lemon slices.
- Roast for 30-35 minutes until chicken is cooked through (internal temperature 165°F) and potatoes are crispy. Serve hot.
