For the Crust:
- 1 lb large shrimp, peeled and deveined
- 4 oz feta cheese, crumbled
- 4 cloves garlic, minced
- 2 tbsp fresh oregano, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 lemon, juiced and zested
- 3 tbsp olive oil
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- 1/4 cup dry white wine (optional)
Instructions
1. Prepare the Crust:
- In a bowl, combine shrimp with lemon juice, half the olive oil, half the garlic, red pepper flakes, salt, and pepper. Marinate for 10 minutes.
- Heat remaining olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add remaining garlic and cook for 30 seconds until fragrant. Pour in white wine (if using) and simmer for 1 minute to deglaze.
- Return shrimp to skillet, add oregano, parsley, dill, and lemon zest. Toss to combine and cook for 1 minute until herbs are wilted.
- Remove from heat, sprinkle crumbled feta over the shrimp, and serve immediately.
