For the Crust:
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup chicken broth
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a bowl, mix cream cheese, mozzarella, Parmesan, garlic, parsley, basil, oregano, salt, and pepper until well combined.
- Using a sharp knife, cut a horizontal pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast evenly with the herb-cheese mixture, then secure with toothpicks if needed.
- Place chicken in the prepared baking dish, drizzle with olive oil, and pour chicken broth around the chicken.
- Bake for 25-30 minutes, or until chicken is cooked through (internal temperature of 165°F). Let rest 5 minutes before serving.
