Tender, juicy chicken breasts stuffed with a rich, creamy herb and cheese filling, then oven-roasted to perfection for a flavorful and impressive main dish.

For the Crust:

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a bowl, mix cream cheese, mozzarella, Parmesan, garlic, parsley, basil, oregano, salt, and pepper until well combined.
  3. Using a sharp knife, cut a horizontal pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast evenly with the herb-cheese mixture, then secure with toothpicks if needed.
  5. Place chicken in the prepared baking dish, drizzle with olive oil, and pour chicken broth around the chicken.
  6. Bake for 25-30 minutes, or until chicken is cooked through (internal temperature of 165°F). Let rest 5 minutes before serving.
