For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup crushed pineapple, drained
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- For frosting: 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup pineapple juice
- For garnish: fresh pineapple chunks
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk, mixing until just combined. Fold in crushed pineapple.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- For frosting, beat cream cheese until smooth. Add powdered sugar and pineapple juice, mixing until creamy. Spread over cooled cake and garnish with pineapple chunks.
