For the Crust:
- 1 lb ground beef (80/20 blend)
- 8 oz cremini mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Worcestershire sauce
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 4 slices Swiss cheese
- 4 cups chopped romaine lettuce
- 1 medium tomato, diced
- 1/4 cup dill pickle slices
- 2 tbsp sugar-free ketchup or mayo (optional)
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add onions and mushrooms, sauté until softened and browned, about 5-7 minutes. Add garlic and cook for 1 more minute, then remove mixture to a plate.
- In the same skillet, add ground beef. Cook until browned, breaking it up with a spoon. Drain excess fat if desired.
- Return mushroom mixture to skillet with beef. Stir in Worcestershire sauce, smoked paprika, salt, and pepper. Cook for 2-3 minutes to combine flavors.
- Place Swiss cheese slices on top of the beef mixture. Cover skillet and let cheese melt for 1-2 minutes.
- Divide chopped romaine among four bowls. Top with the cheesy beef and mushroom mixture, then garnish with diced tomato and pickle slices. Serve with sugar-free ketchup or mayo if desired.
