For the Crust:
- 2 large sweet potatoes, peeled and thinly sliced
- 2 ripe pears, cored and thinly sliced
- 8 oz brie cheese, rind removed and sliced
- 1/2 cup pecans, chopped
- 1/4 cup maple syrup
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1/2 tsp ground cinnamon
- Salt and black pepper to taste
- 1/4 cup panko breadcrumbs
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a bowl, toss sweet potato slices with olive oil, salt, and pepper. Arrange half in the dish in an even layer.
- Layer pear slices over sweet potatoes, sprinkle with thyme and cinnamon, then top with brie slices.
- Add remaining sweet potatoes, drizzle with half the maple syrup, and cover with foil. Bake for 25 minutes.
- Mix pecans, panko, and remaining maple syrup. Remove foil, sprinkle topping over bake, and bake uncovered for 10-15 minutes until golden and bubbly.
- Let cool for 5 minutes before serving warm.
