For the Crust:
- 2 medium zucchinis, sliced lengthwise
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
- 1 large egg
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange zucchini slices on a baking sheet, brush with olive oil, and season with salt and pepper. Roast for 10 minutes until slightly tender.
- In a bowl, mix ricotta, Parmesan, egg, oregano, garlic powder, salt, and pepper until well combined.
- Spread a thin layer of marinara sauce in a baking dish. Layer half the roasted zucchini slices over the sauce.
- Spread the ricotta mixture evenly over the zucchini layer. Top with remaining zucchini slices.
- Pour the remaining marinara sauce over the top and sprinkle with shredded mozzarella.
- Bake for 20-25 minutes until cheese is bubbly and golden. Garnish with fresh basil before serving.
