A deliciously layered zucchini dish filled with ricotta cheese and topped with marinara sauce and melted cheese.

For the Crust:
- 2 large zucchinis, sliced into rounds
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 375°F (190°C).
- Brush zucchini slices with olive oil and season with salt, pepper, and oregano. Grill or saute until tender.
- In a baking dish, layer grilled zucchini, spoonfuls of ricotta, and marinara sauce. Repeat the layers, ending with mozzarella on top.
- Bake for 20-30 minutes until cheese is melted and bubbly. Serve warm.
