For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cottage cheese
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, mix cottage cheese, sugar, eggs, oil, lemon zest, lemon juice, and vanilla until smooth.
  3. Combine wet and dry ingredients, stirring until just mixed. Gently fold in blueberries.
  4. Pour batter into prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  5. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

You can customize the seasonings to taste.
