For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup cottage cheese
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1 cup fresh blueberries
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, mix cottage cheese, sugar, eggs, oil, lemon zest, lemon juice, and vanilla until smooth.
- Combine wet and dry ingredients, stirring until just mixed. Gently fold in blueberries.
- Pour batter into prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
