Description

A delightful, self-saucing dessert with a tangy lemon base and juicy blueberries, topped with a golden cobbler crust that forms magically as it bakes.


Ingredients

For the Crust:

  • 2 cups fresh or frozen blueberries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar, divided
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Spread blueberries evenly in the bottom of the prepared dish.
  3. In a medium bowl, whisk together flour, 3/4 cup sugar, baking powder, and salt. Stir in milk and melted butter until just combined. Spoon batter over blueberries.
  4. In a small bowl, mix remaining 1/4 cup sugar with lemon zest and lemon juice. Pour evenly over the batter. Do not stir.
  5. Bake for 40-45 minutes, until top is golden and a toothpick inserted comes out clean. Serve warm.
