Description

A classic Italian-American dish featuring tender chicken cutlets in a bright, buttery lemon sauce.

For the Crust:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Lemon slices for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken with salt and pepper. Dredge each piece in flour, then dip in beaten egg mixed with Parmesan.
  2. Heat butter and olive oil in a large skillet over medium heat. Cook chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside.
  3. Add chicken broth and lemon juice to the skillet, scraping up browned bits. Simmer for 2-3 minutes until slightly reduced.
  4. Return chicken to the skillet, spooning sauce over it. Garnish with parsley and lemon slices before serving.

Notes

You can customize the seasonings to taste.
