For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 lemon, sliced
  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup cherry tomatoes
  • 1 red onion, sliced
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. Place chicken breasts on the sheet pan. Drizzle with olive oil and season with garlic, oregano, salt, and pepper.
  3. Arrange lemon slices, cherry tomatoes, and red onion around the chicken. Sprinkle feta cheese over everything.
  4. Bake for 25-30 minutes, until chicken is cooked through and vegetables are tender.
  5. Garnish with fresh parsley before serving.
