A vibrant, one-bowl meal featuring tender lemon-garlic chicken served over fluffy rice with roasted vegetables, perfect for a quick and healthy dinner.

For the Crust:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup white rice, uncooked
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 lemons (juice and zest)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss broccoli and bell peppers with 1 tablespoon olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20-25 minutes until tender.
  2. Cook rice according to package instructions. Fluff with a fork and set aside.
  3. In a skillet over medium heat, add remaining olive oil. Sauté chicken pieces until golden and cooked through, about 8-10 minutes. Add garlic, lemon juice, zest, oregano, salt, and pepper, cooking for 2 more minutes.
  4. Assemble bowls: divide rice among bowls, top with roasted vegetables and lemon garlic chicken. Garnish with fresh parsley and serve warm.
