For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup white rice, cooked
  • 2 avocados, pitted and peeled
  • 1/2 cup fresh cilantro
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions and set aside.
  2. In a blender, combine avocados, cilantro, Greek yogurt, lime juice, and a pinch of salt. Blend until smooth to make the avocado cilantro cream.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  4. Add shrimp to the skillet, season with salt, black pepper, and red pepper flakes if using. Cook for 2-3 minutes per side until pink and opaque.
  5. Stir in lemon juice and zest, then remove from heat.
  6. Assemble bowls by dividing rice among four bowls, topping with shrimp, and drizzling with avocado cilantro cream.

Notes

You can customize the seasonings to taste.
