For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup white rice, cooked
- 2 avocados, pitted and peeled
- 1/2 cup fresh cilantro
- 1/4 cup Greek yogurt
- 1 tbsp lime juice
- Salt and black pepper to taste
- Red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside.
- In a blender, combine avocados, cilantro, Greek yogurt, lime juice, and a pinch of salt. Blend until smooth to make the avocado cilantro cream.
- Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add shrimp to the skillet, season with salt, black pepper, and red pepper flakes if using. Cook for 2-3 minutes per side until pink and opaque.
- Stir in lemon juice and zest, then remove from heat.
- Assemble bowls by dividing rice among four bowls, topping with shrimp, and drizzling with avocado cilantro cream.
