For the Crust:
- 4 boneless, skinless chicken breasts
- 2 lemons (juice and zest)
- 2 tbsp fresh herbs (such as rosemary, thyme, or parsley), chopped
- 1 cup long-grain white rice
- 2 cups mixed vegetables (such as broccoli florets and sliced bell peppers)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season chicken breasts with lemon zest, chopped herbs, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in heavy cream, bring to a simmer, and cook for 3-4 minutes until slightly thickened. Stir in lemon juice and season with salt and pepper.
- Meanwhile, cook rice according to package instructions. Steam or sauté mixed vegetables until tender-crisp. Serve chicken over rice with veggies on the side, drizzled with garlic cream sauce.
