For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 1 cup white rice, uncooked
- 2 lemons (juice and zest)
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped

- 1/2 cup Greek yogurt
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup cherry tomatoes, halved

Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside.
- In a bowl, combine chicken with lemon juice, zest, garlic, parsley, dill, salt, and pepper. Marinate for 10 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken for 6-8 minutes until golden and cooked through.
- In a small bowl, mix Greek yogurt with a squeeze of lemon juice and a pinch of herbs to make the creamy sauce.
