For the Crust:

Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, cream together butter and sugar until light and fluffy. Beat in egg, then stir in lemon juice and zest.
- In another bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients, alternating with milk until just combined.
- Spoon batter into prepared mini muffin cups, filling each about 2/3 full.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean. Let cool slightly, then dust with powdered sugar before serving.
