For the Crust:
- 1/4 cup cottage cheese
- 1 large egg
- 2 tablespoons all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1/2 teaspoon poppy seeds
- 1/4 teaspoon baking powder
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together cottage cheese and egg until smooth.
- Add flour, sugar, lemon zest, lemon juice, poppy seeds, baking powder, and salt. Mix until well combined.
- Pour batter into a greased microwave-safe mug and microwave on high for 1 minute 30 seconds to 2 minutes, or until cake is set and springs back when touched.
