Description

A light and fluffy single-serving mug cake made with cottage cheese for added protein and a bright lemon poppy seed flavor.

For the Crust:

  • 1/4 cup cottage cheese
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/2 teaspoon poppy seeds
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together cottage cheese and egg until smooth.
  2. Add flour, sugar, lemon zest, lemon juice, poppy seeds, baking powder, and salt. Mix until well combined.
  3. Pour batter into a greased microwave-safe mug and microwave on high for 1 minute 30 seconds to 2 minutes, or until cake is set and springs back when touched.
