Description

Soft, chewy cookies with a zesty lemon flavor and a gooey white chocolate center that oozes like lava when warm.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 4 ounces white chocolate, chopped into chunks
  • Powdered sugar for dusting (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, lemon zest, lemon juice, and vanilla extract until combined.
  4. Gradually mix in the dry ingredients until just incorporated. Fold in white chocolate chunks.
  5. Scoop dough into 12 equal portions, roll into balls, and place on baking sheet, spacing 2 inches apart.
  6. Bake for 10-12 minutes until edges are lightly golden but centers are soft. Let cool on sheet for 5 minutes before transferring to a wire rack.
  7. Dust with powdered sugar if desired and serve warm for the best ‘lava’ effect.
