For the Crust:
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- 4 ounces white chocolate, chopped into chunks
- Powdered sugar for dusting (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, lemon zest, lemon juice, and vanilla extract until combined.
- Gradually mix in the dry ingredients until just incorporated. Fold in white chocolate chunks.
- Scoop dough into 12 equal portions, roll into balls, and place on baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden but centers are soft. Let cool on sheet for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar if desired and serve warm for the best ‘lava’ effect.
