For the Crust:
- 1 cup cottage cheese
- 2 large eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup fresh blueberries
- Cooking spray or butter for greasing
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.
- In a blender, combine cottage cheese, eggs, maple syrup, and vanilla. Blend until smooth.
- In a bowl, whisk together flour, baking powder, and salt. Pour in the wet ingredients and stir until just combined. Gently fold in blueberries.
- Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
