For the Crust:

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh blueberries
  • Cooking spray or butter for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.
  2. In a blender, combine cottage cheese, eggs, maple syrup, and vanilla. Blend until smooth.
  3. In a bowl, whisk together flour, baking powder, and salt. Pour in the wet ingredients and stir until just combined. Gently fold in blueberries.
  4. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  5. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
