Description

A creamy and vibrant pasta dish featuring tender linguine tossed in a rich sauce made with sun-dried tomatoes, fresh spinach, and a touch of cream.

For the Crust:

  • 12 oz linguine pasta
  • 1 cup sun-dried tomatoes in oil, chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Cook linguine according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
  3. Add sun-dried tomatoes and cook for 2 minutes. Stir in spinach and cook until wilted.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce is smooth.
  5. Add drained linguine to the skillet, tossing to coat in the sauce. If needed, add reserved pasta water to reach desired consistency.
  6. Season with salt and pepper. Garnish with fresh basil and serve immediately.

Notes

You can customize the seasonings to taste.
