For the Crust:
- 12 oz linguine pasta
- 1 cup sun-dried tomatoes in oil, chopped
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Cook linguine according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
- Add sun-dried tomatoes and cook for 2 minutes. Stir in spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce is smooth.
- Add drained linguine to the skillet, tossing to coat in the sauce. If needed, add reserved pasta water to reach desired consistency.
- Season with salt and pepper. Garnish with fresh basil and serve immediately.
