For the Crust:

  • 1 lb boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season the chicken slices with olive oil, oregano, garlic powder, smoked paprika, salt, and pepper. Grill or pan-sear over medium-high heat for 5-7 minutes per side, until cooked through.
  2. While the chicken cooks, prepare the base: divide the cooked quinoa among four bowls.
  3. Top the quinoa with cherry tomatoes, cucumber, red onion, and Kalamata olives.
  4. Slice the cooked chicken and arrange it over the vegetables.
  5. Drizzle each bowl generously with tzatziki sauce and sprinkle with crumbled feta cheese.
  6. Garnish with fresh parsley and serve immediately.
