- 1 lb boneless, skinless chicken breasts, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season the chicken slices with olive oil, oregano, garlic powder, smoked paprika, salt, and pepper. Grill or pan-sear over medium-high heat for 5-7 minutes per side, until cooked through.
- While the chicken cooks, prepare the base: divide the cooked quinoa among four bowls.
- Top the quinoa with cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Slice the cooked chicken and arrange it over the vegetables.
- Drizzle each bowl generously with tzatziki sauce and sprinkle with crumbled feta cheese.
- Garnish with fresh parsley and serve immediately.
