For the Crust:

  • 3 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup sliced mushrooms
  • 2 tablespoons chopped onions
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk eggs with salt and pepper until frothy.
  2. Melt butter in a non-stick skillet over medium heat, then sauté bell peppers, mushrooms, and onions until tender.
  3. Pour eggs over vegetables, tilting pan to spread evenly. Cook until edges set.
  4. Sprinkle cheese over half the omelette, fold other half over, and cook until cheese melts.
  5. Garnish with parsley and serve hot.
