Description

A comforting, cheesy bake loaded with tender chicken, earthy mushrooms, and fresh spinach—perfect for a low-carb dinner.

For the Crust:

  • 2 large boneless, skinless chicken breasts, cubed
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add mushrooms and garlic; sauté until mushrooms are tender, about 5 minutes. Add spinach and cook until wilted.
  4. Return chicken to the skillet. Stir in heavy cream, Italian seasoning, salt, and pepper. Simmer for 2 minutes.
  5. Transfer mixture to a baking dish. Top with mozzarella and Parmesan cheeses.
  6. Bake for 15-20 minutes, until cheese is melted and bubbly. Let rest 5 minutes before serving.

Notes

You can customize the seasonings to taste.
