For the Crust:
- 2 large boneless, skinless chicken breasts, cubed
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add mushrooms and garlic; sauté until mushrooms are tender, about 5 minutes. Add spinach and cook until wilted.
- Return chicken to the skillet. Stir in heavy cream, Italian seasoning, salt, and pepper. Simmer for 2 minutes.
- Transfer mixture to a baking dish. Top with mozzarella and Parmesan cheeses.
- Bake for 15-20 minutes, until cheese is melted and bubbly. Let rest 5 minutes before serving.
