For the Crust:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar, divided
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup water
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a medium bowl, whisk together flour, 3/4 cup sugar, and salt. Stir in milk, melted butter, and vanilla until just combined. Spread batter evenly in the prepared dish.
  3. In a small saucepan, combine water, remaining 1/4 cup sugar, lemon zest, and lemon juice. Bring to a simmer over medium heat, stirring until sugar dissolves. Carefully pour the hot lemon mixture evenly over the batter (do not stir).
  4. Bake for 30-35 minutes, until the top is golden brown and set. The cobbler will have a saucy bottom layer and a cake-like top. Let cool for 10 minutes before serving.
