Description
A visually stunning, layered dessert featuring mango, coconut, and crispy glass-like sugar decorations, served in individual glasses to resemble a terrarium.
Ingredients
Scale
For the Crust:
- 2 ripe mangoes, peeled and diced
- 1 cup coconut milk
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup water
- 1 cup granulated sugar (for glass decoration)
- 1/4 cup shredded coconut, toasted
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- In a blender, puree the diced mangoes until smooth. Set aside.
- In a saucepan, combine coconut milk, heavy cream, sugar, and vanilla extract. Heat over medium until sugar dissolves, then chill for 30 minutes.
- To make glass sugar decorations: In a clean saucepan, combine 1 cup sugar and 1/2 cup water. Cook over medium-high heat until it reaches 300°F (hard crack stage). Pour onto a silicone mat, let cool, then break into shards.
- Layer the dessert: In serving glasses, add a spoonful of mango puree, then a layer of chilled coconut cream. Repeat layers.
- Top with toasted shredded coconut, insert sugar glass shards into the layers, and garnish with mint leaves.
