Description

A visually stunning, layered dessert featuring mango, coconut, and crispy glass-like sugar decorations, served in individual glasses to resemble a terrarium.

For the Crust:

  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • 1 cup granulated sugar (for glass decoration)
  • 1/4 cup shredded coconut, toasted
  • Fresh mint leaves for garnish

Instructions

1. Prepare the Crust:

  1. In a blender, puree the diced mangoes until smooth. Set aside.
  2. In a saucepan, combine coconut milk, heavy cream, sugar, and vanilla extract. Heat over medium until sugar dissolves, then chill for 30 minutes.
  3. To make glass sugar decorations: In a clean saucepan, combine 1 cup sugar and 1/2 cup water. Cook over medium-high heat until it reaches 300°F (hard crack stage). Pour onto a silicone mat, let cool, then break into shards.
  4. Layer the dessert: In serving glasses, add a spoonful of mango puree, then a layer of chilled coconut cream. Repeat layers.
  5. Top with toasted shredded coconut, insert sugar glass shards into the layers, and garnish with mint leaves.
