For the Crust:
- 1 lb carrots, peeled and sliced into 1/2-inch rounds
- 2 tbsp unsalted butter
- 1/4 cup pure maple syrup
- 1/4 tsp sea salt
- 1/4 cup shelled pistachios, roughly chopped
- 2 oz brie cheese, rind removed and crumbled
- 1 tbsp fresh thyme leaves
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a large oven-safe skillet, melt butter over medium heat.
- Add carrots to the skillet and sauté for 5 minutes until slightly softened. Pour in maple syrup and sprinkle with salt, stirring to coat.
- Transfer skillet to the oven and roast for 20 minutes, stirring halfway, until carrots are tender and caramelized.
- While carrots roast, combine pistachios, crumbled brie, thyme, and black pepper in a small bowl.
- Remove carrots from oven and sprinkle the pistachio-brie mixture over the top. Return to oven for 3-5 minutes until brie is slightly melted.
- Serve warm as a side dish, garnished with extra thyme if desired.
