Description

A sweet and savory side dish featuring tender carrots glazed in maple syrup and topped with a crunchy pistachio and creamy brie crumble.

For the Crust:

  • 1 lb carrots, peeled and sliced into 1/2-inch rounds
  • 2 tbsp unsalted butter
  • 1/4 cup pure maple syrup
  • 1/4 tsp sea salt
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 oz brie cheese, rind removed and crumbled
  • 1 tbsp fresh thyme leaves
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). In a large oven-safe skillet, melt butter over medium heat.
  2. Add carrots to the skillet and sauté for 5 minutes until slightly softened. Pour in maple syrup and sprinkle with salt, stirring to coat.
  3. Transfer skillet to the oven and roast for 20 minutes, stirring halfway, until carrots are tender and caramelized.
  4. While carrots roast, combine pistachios, crumbled brie, thyme, and black pepper in a small bowl.
  5. Remove carrots from oven and sprinkle the pistachio-brie mixture over the top. Return to oven for 3-5 minutes until brie is slightly melted.
  6. Serve warm as a side dish, garnished with extra thyme if desired.

Notes

You can customize the seasonings to taste.
