For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 2 medium sweet potatoes, peeled and diced
- 3 tablespoons olive oil, divided
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 cups mixed greens or spinach
- 1/4 cup sliced red onion
- Optional: chopped parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and slightly crispy.
- In a bowl, whisk together maple syrup, Dijon mustard, garlic powder, smoked paprika, and remaining olive oil. Add cubed chicken and toss to coat.
- Heat a skillet over medium-high heat. Cook chicken for 6-8 minutes, stirring occasionally, until cooked through and glazed.
- Assemble bowls: divide mixed greens among four bowls. Top with roasted sweet potatoes, cooked chicken, and sliced red onion. Drizzle with any remaining sauce from the skillet.
- Garnish with chopped parsley if desired and serve warm.
