For the Crust:
- 2 medium sweet potatoes, peeled and thinly sliced
- 2 medium yams, peeled and thinly sliced
- 2 medium beets, peeled and thinly sliced
- 1 cup Gruyere cheese, shredded
- 1/4 cup maple syrup
- 2 tbsp hot honey
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a bowl, toss the sweet potato, yam, and beet slices with maple syrup, hot honey, minced garlic, thyme, salt, and pepper.
- Layer the vegetable slices evenly in the prepared baking dish, alternating between sweet potato, yam, and beet.
- Pour the heavy cream over the layered vegetables, then sprinkle shredded Gruyere cheese on top.
- Cover the dish with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until the cheese is golden and vegetables are tender.
- Let rest for 5 minutes before serving.
