Description

A rich, moist fruit cake bursting with autumn flavors, featuring seasonal fruits and a sweet maple glaze.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup buttermilk
  • 1 cup diced apples
  • 1/2 cup diced pears
  • 1/2 cup cranberries
  • 1/2 cup chopped walnuts
  • For the glaze: 1/2 cup maple syrup, 1 cup powdered sugar, 1 tbsp butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in maple syrup.
  4. Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Fold in apples, pears, cranberries, and walnuts.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
  6. For the glaze, whisk together maple syrup, powdered sugar, and melted butter until smooth. Drizzle over cooled cake.
