For the Crust:
- 4 salmon fillets (6 oz each)
- 1/4 cup maple syrup
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 cup fresh cranberries
- 1/4 cup orange juice
- 2 tbsp honey
- 1/4 cup chopped walnuts
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together maple syrup, soy sauce, Dijon mustard, and minced garlic. Brush the glaze over the salmon fillets and place them on the baking sheet. Bake for 12-15 minutes until salmon flakes easily.
- While salmon bakes, make the relish: In a saucepan, combine cranberries, orange juice, and honey. Cook over medium heat until cranberries burst and mixture thickens, about 10 minutes. Stir in walnuts and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear salmon for 2 minutes per side for extra crispiness, if desired.
- Serve salmon hot, topped with cranberry relish.
