For the Crust:
- 4 medium sweet potatoes
- 1 cup brie cheese, cubed
- 1/2 cup pecans, chopped
- 1/4 cup maple syrup
- 1/2 cup fresh cranberries
- 2 tablespoons brown sugar
- 1 tablespoon butter
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
- While potatoes bake, prepare cranberry glaze: In a small saucepan, combine cranberries, brown sugar, and 2 tablespoons water. Simmer until cranberries burst and sauce thickens, about 10 minutes.
- Slice baked sweet potatoes open and fluff the insides with a fork. Season with salt, pepper, and cinnamon.
- Stuff each potato with brie cubes and chopped pecans. Drizzle with maple syrup and return to oven for 5-7 minutes until cheese is melted.
- Top stuffed sweet potatoes with cranberry glaze and serve warm.
