A sweet and savory dish featuring roasted sweet potatoes stuffed with creamy brie, crunchy pecans, and a drizzle of maple syrup, all topped with a tangy cranberry glaze.

For the Crust:

  • 4 medium sweet potatoes
  • 1 cup brie cheese, cubed
  • 1/2 cup pecans, chopped
  • 1/4 cup maple syrup
  • 1/2 cup fresh cranberries
  • 2 tablespoons brown sugar
  • 1 tablespoon butter
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  2. While potatoes bake, prepare cranberry glaze: In a small saucepan, combine cranberries, brown sugar, and 2 tablespoons water. Simmer until cranberries burst and sauce thickens, about 10 minutes.
  3. Slice baked sweet potatoes open and fluff the insides with a fork. Season with salt, pepper, and cinnamon.
  4. Stuff each potato with brie cubes and chopped pecans. Drizzle with maple syrup and return to oven for 5-7 minutes until cheese is melted.
  5. Top stuffed sweet potatoes with cranberry glaze and serve warm.
