Description

A vibrant and flavorful side dish featuring crispy Brussels sprouts rings roasted with maple syrup, served with a tangy orange-feta cream for dipping.

For the Crust:

  • 1 lb Brussels sprouts, trimmed and sliced into rings
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • Zest and juice of 1 orange
  • 1 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss Brussels sprouts rings with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated. Spread in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until crispy and caramelized.
  4. Meanwhile, in a small bowl, mix feta cheese, Greek yogurt, orange zest, orange juice, and parsley until smooth. Adjust seasoning if needed.
  5. Serve the roasted Brussels sprouts rings warm with the orange-feta cream on the side for dipping.
