Description

Sweet and savory roasted carrots glazed with maple syrup, topped with crumbled feta and crunchy pistachios.


Ingredients

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped pistachios
  • 1 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, maple syrup, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes, until tender and caramelized.
  4. Transfer carrots to a serving dish and top with feta, pistachios, and parsley.
  5. Serve warm.

You can customize the seasonings to taste.
