For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped pistachios
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, maple syrup, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, until tender and caramelized.
- Transfer carrots to a serving dish and top with feta, pistachios, and parsley.
- Serve warm.
