A vibrant and elegant side dish featuring sweet maple-roasted carrots paired with creamy whipped feta and a tangy cranberry dust for a festive touch.

For the Crust:

  • 1 lb rainbow carrots, trimmed and halved lengthwise
  • 2 tbsp pure maple syrup
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 4 oz feta cheese, crumbled
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1/4 cup dried cranberries
  • 1 tsp fresh thyme leaves
  • 2 tbsp chopped walnuts, for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with maple syrup, olive oil, smoked paprika, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and caramelized.
  2. While carrots roast, blend feta, Greek yogurt, and lemon juice in a food processor until smooth and creamy. Set aside.
  3. Pulse dried cranberries in a clean food processor or spice grinder until finely ground into a dust.
  4. Spread whipped feta on a serving platter. Arrange roasted carrots on top, sprinkle with cranberry dust, thyme, and walnuts. Serve warm.

You can customize the seasonings to taste.
