For the Crust:
- 2 medium delicata squash, halved, seeded, and sliced into 1/2-inch rings
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese
- 2 tablespoons dried cranberries
- 2 tablespoons chopped pistachios
- 1 tablespoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss delicata squash rings with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated.
- Arrange squash in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and caramelized.
- Transfer roasted squash to a serving platter. Top with crumbled feta, dried cranberries, chopped pistachios, and fresh thyme leaves.
- Serve warm as a side dish or over greens for a light meal.
