Description

A sweet and savory side dish featuring tender roasted parsnips glazed with maple syrup, topped with tangy blue cheese crumbles and crunchy candied pecans.

For the Crust:

  • 1.5 lbs parsnips, peeled and cut into 2-inch sticks
  • 3 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup pecans
  • 2 tbsp brown sugar
  • 1 tbsp butter
  • 1/3 cup crumbled blue cheese
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss parsnips with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated. Spread in a single layer on the baking sheet.
  3. Roast for 25-30 minutes, turning halfway, until parsnips are caramelized and tender.
  4. While parsnips roast, melt butter in a small skillet over medium heat. Add pecans and brown sugar, stirring for 3-4 minutes until sugar melts and coats pecans. Transfer to a plate to cool.
  5. Arrange roasted parsnips on a serving platter. Top with blue cheese crumbles, candied pecans, and chopped parsley. Serve warm.
