For the Crust:
- 2 large sweet potatoes, halved lengthwise
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1/2 teaspoon red pepper flakes
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place sweet potato halves on a baking sheet, cut side up.
- Drizzle with olive oil and maple syrup, then sprinkle with smoked paprika, salt, and pepper. Roast for 25-30 minutes, until tender.
- While potatoes roast, combine feta, Greek yogurt, and lemon juice in a food processor. Blend until smooth and creamy.
- In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes to infuse. Remove from heat.
- Once potatoes are done, let cool slightly. Top each half with a generous dollop of whipped feta, drizzle with hot honey, and garnish with fresh thyme.
