Description

Sweet potatoes are roasted until tender, then topped with creamy whipped feta and a drizzle of spicy-sweet hot honey for a perfect balance of flavors.

For the Crust:

  • 2 large sweet potatoes, halved lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 ounces feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Place sweet potato halves on a baking sheet, cut side up.
  2. Drizzle with olive oil and maple syrup, then sprinkle with smoked paprika, salt, and pepper. Roast for 25-30 minutes, until tender.
  3. While potatoes roast, combine feta, Greek yogurt, and lemon juice in a food processor. Blend until smooth and creamy.
  4. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes to infuse. Remove from heat.
  5. Once potatoes are done, let cool slightly. Top each half with a generous dollop of whipped feta, drizzle with hot honey, and garnish with fresh thyme.
