For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 1/4 cup pure maple syrup
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup crumbled blue cheese
- 1/2 cup candied pecans, roughly chopped
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from oven and transfer to a serving dish. Top with crumbled blue cheese and candied pecans while still warm.
- Garnish with fresh parsley and serve immediately.
