Description

A savory-sweet side dish featuring tender roasted sweet potatoes glazed with maple syrup, topped with creamy blue cheese and crunchy candied pecans.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled blue cheese
  • 1/2 cup candied pecans, roughly chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, maple syrup, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
  4. Remove from oven and transfer to a serving dish. Top with crumbled blue cheese and candied pecans while still warm.
  5. Garnish with fresh parsley and serve immediately.
