For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 3 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
- Spread sweet potatoes in a single layer on the baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and caramelized.
- Remove from oven and gently stir in cranberries and walnuts. Return to oven for 5 minutes to warm through.
- Transfer to a serving dish and serve warm.
