Description

Tender lamb chops marinated in a zesty Greek-inspired blend, grilled to perfection and served with sautéed mushrooms and juicy tomatoes.


Ingredients

For the Crust:

  • 8 lamb chops
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together olive oil, garlic, lemon juice, oregano, salt, and pepper. Add lamb chops, coat well, and marinate for at least 1 hour.
  2. Heat a grill or skillet over medium-high heat. Cook lamb chops for 3-4 minutes per side for medium-rare, or to desired doneness.
  3. In the same pan, sauté mushrooms until tender, then add tomatoes and cook for 2-3 minutes until softened. Serve lamb chops topped with mushroom-tomato mixture and garnished with parsley.
