For the Crust:

  • 12 ounces high-quality white chocolate, chopped
  • 1 tablespoon culinary-grade matcha powder
  • 1/2 cup salted pistachios, roughly chopped
  • 1/2 teaspoon flaky sea salt (like Maldon)

Instructions

1. Prepare the Crust:

  1. Line a baking sheet with parchment paper and set aside.
  2. Melt the white chocolate using a double boiler or in the microwave in 30-second intervals, stirring until smooth.
  3. Sift the matcha powder into the melted chocolate and whisk vigorously until fully incorporated and no green streaks remain.
  4. Pour the matcha chocolate onto the prepared baking sheet and spread into an even layer about 1/4-inch thick.
  5. Immediately sprinkle the chopped pistachios evenly over the chocolate, then finish with a light sprinkle of flaky sea salt.
  6. Allow the bark to set at room temperature or in the refrigerator for 1-2 hours until firm, then break into pieces.
