For the Crust:
- 1 block (8 oz) feta cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and halved
- 2 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- Fresh basil or parsley for garnish
- 4 pita breads, cut into wedges and toasted
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place feta block in a small baking dish.
- Scatter cherry tomatoes, olives, and minced garlic around the feta.
- Drizzle olive oil over the cheese and vegetables, then sprinkle with oregano and red pepper flakes.
- Bake for 20-25 minutes, until feta is soft and tomatoes are bursting.
- While baking, toast pita wedges in the oven or a skillet until golden and crisp.
- Garnish baked feta with fresh herbs and serve immediately with warm pita wedges.
