For the Crust:
- 4 salmon fillets (6 oz each)
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat salmon fillets dry and place them on the baking sheet. Drizzle with olive oil and season with salt, pepper, oregano, basil, and red pepper flakes.
- Top each fillet with minced garlic, sun-dried tomatoes, and crumbled feta cheese.
- Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley and serve immediately with lemon wedges.
