Description

A vibrant and healthy salmon dish topped with tangy feta, sun-dried tomatoes, and Mediterranean herbs, baked to perfection.


Ingredients

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat salmon fillets dry and place them on the baking sheet. Drizzle with olive oil and season with salt, pepper, oregano, basil, and red pepper flakes.
  3. Top each fillet with minced garlic, sun-dried tomatoes, and crumbled feta cheese.
  4. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
  5. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

You can customize the seasonings to taste.
