For the Crust:
- 1 large burrata cheese ball
- 1 medium zucchini, sliced into rounds
- 1 red bell pepper, sliced
- 1 small eggplant, cubed
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1/2 cup Kalamata olives
- 1/4 cup fresh basil leaves
- 1 baguette, sliced and toasted
- 2 tbsp balsamic glaze
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss zucchini, bell pepper, eggplant, and cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper on a baking sheet.
- Roast vegetables for 20-25 minutes until tender and slightly charred, stirring halfway through. Let cool slightly.
- Arrange roasted vegetables, burrata (placed whole or torn), olives, and toasted baguette slices on a large board or platter.
- Drizzle with balsamic glaze, scatter fresh basil leaves over top, and serve immediately.
