Description

A vibrant, shareable board featuring creamy burrata cheese, roasted seasonal vegetables, olives, and crusty bread, perfect for entertaining or a light meal.

For the Crust:

  • 1 large burrata cheese ball
  • 1 medium zucchini, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 small eggplant, cubed
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1/2 cup Kalamata olives
  • 1/4 cup fresh basil leaves
  • 1 baguette, sliced and toasted
  • 2 tbsp balsamic glaze

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss zucchini, bell pepper, eggplant, and cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper on a baking sheet.
  2. Roast vegetables for 20-25 minutes until tender and slightly charred, stirring halfway through. Let cool slightly.
  3. Arrange roasted vegetables, burrata (placed whole or torn), olives, and toasted baguette slices on a large board or platter.
  4. Drizzle with balsamic glaze, scatter fresh basil leaves over top, and serve immediately.

You can customize the seasonings to taste.
