For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 lemon, juiced and zested
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chicken broth
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt, pepper, oregano, and thyme.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear until golden, about 4 minutes per side.
  4. Add garlic, artichokes, and asparagus to the skillet. Pour in lemon juice, zest, and chicken broth.
  5. Transfer skillet to the oven and bake for 20 minutes, or until chicken is cooked through.
  6. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
