A vibrant one-pan chicken dish bursting with Mediterranean flavors, featuring tender chicken, briny olives, tangy lemon, and creamy feta cheese.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 1 cup Kalamata olives, pitted
  • 1 red onion, sliced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large baking dish, toss chicken breasts with olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Arrange lemon slices, red onion, and olives around the chicken.
  4. Bake for 25-30 minutes, or until chicken is cooked through.
  5. Sprinkle with feta cheese and parsley, then bake for an additional 5 minutes.
