For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 lemon, sliced
- 1 cup Kalamata olives, pitted
- 1 red onion, sliced
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large baking dish, toss chicken breasts with olive oil, garlic, oregano, thyme, salt, and pepper.
- Arrange lemon slices, red onion, and olives around the chicken.
- Bake for 25-30 minutes, or until chicken is cooked through.
- Sprinkle with feta cheese and parsley, then bake for an additional 5 minutes.
